Chef Giovanni Passerini returns to his roots with a contemporary eye. Roman by birth and celebrated in Paris, he brings Roman cuisine to life with views of the Villa Borghese, close to the Spanish Steps. The quinto quarto, the “fifth quarter” of the animal, considered the less noble parts, but here, an elegant approach, revealing their delicacy.
