Café Montesol, our restaurant in the heart of Ibiza Town

Café Montesol is a refuge from the summer sun, an escape when cooler weather descends in the heart of Ibiza Town. Tucked away on the ground floor of Ibiza's original hotel, situated a stone's throw from the marina, our restaurant is the ideal location to grab a snack, or linger over a meal. Housed in the iconic Neo-Colonial building, Café Montesol opens onto the Vara de Rey, a car free zone where locals and tourists gather to enjoy one of the most beautiful parts of Ibiza Town.

The Pace of Ibiza, Served Daily

A terrace where time pauses and Ibiza passes by. Visitors marvelling in the magnificence of the historic Dalt Vila, locals rushing past on their way home, pristine boats departing for hidden beaches and secret coves. Here, beneath the afternoon sun and the night sky, dashes of colour arrive on plates. The delicate green of olives, the bright red hues of pan con tomate, the earthy colour of pumpkin velouté. Each dish inspired by the seasons, plates piled high with fresh produce, local fish and meats from nearby farms.

As autumn and winter descend, the warmth of inside beckons. A welcome escape from inclement weather, only to be greeted by celestial touches and cosy nooks for clandestine coversation. Nights stretch on over cocktails and wine, the cacophony of laughter from table to table, plates placed to share. An echo of the heady nights that once graced the Montesol, a reminder of its storied past.

Chef Alex Larrea infuses local delicacies with a touch of whimsy, concocted with produce from the area. Café Montesol is open all day long, from pancakes piled high for breakfast with fresh juices to tapas to share for lunch and dinner, best washed down with a cold beer or some of Spain’s best small producer wines. A place to spend the evening on the terrace with friends, a favourite of the local community. The embodiment of decades of stories, whispered from table to table.

A dining room reimagined

Dorothée Meilichzon designs an inspiring interior featuring esoteric stones, jewels, and seashells delicately hung throughout a spacious dining room with seating for 60 guests. A troglodyte-like setting, reminiscent of traditional taverns with a celestial touch also hosts a 15-person communal table.

LOCATIONS

A journey that started in Paris, in the summer of 2007. A bar on a quiet street, the start of Paris’ cocktail renaissance. As the years went on, new chapters turned, from new cities, to restaurants and finally hotels. Today, Experimental can be found across Paris, London, New York, Venice, Verbier, Val d’Isere, Ibiza, Menorca and out in the British countryside. Each location inspired by the world around it.
